The dictionary says distilling is purifying a liquid by vaporizing it and then cooling the vapor to collecting the resulting liquid. You may have done a simple science project of distilling water in grade school where you converted impure water into chemically pure water.
Ok, ok. Distilling is the process that makes amazing things like whiskey, rum, vodka, tequila, and gin. This is not to be confused with brewing, which is a fermentation process of making beer. Distillation makes those drinks because, instead of using fermentation, it separates and removes offensive diluting components like water, thus raising your drinks alcohol content! That is why it is called hard liquor since the alcohol by volume (ABV) is over 35%. Compared to the low ABV of less than 10% in beer, wine or cider, distilled beverages are much more superior.
